Yummy Hummus

Ingredients: 

2 cups drained well-cooked or canned chickpeas (keep the liquid)
1/2 cup tahini (sesame paste)
1/4 cup extra-virgin olive oil. Plus a little oil for drizzling
2 cloves garlic, peeled. (more or less according to taste)
Salt and freshly ground black pepper (according to taste)
1 lemon juice
1 tablespoon paprika plus more to sprinkle as garnish (optional)

Directions: 
  • Mix ingredients except the parsley in a food processor; add the chickpea liquid or water as needed until a smooth puree is produced
  • Taste and adjust the seasoning. Serve drizzled with olive oil and sprinkled with a bit more paprika on whole grain pita or baked chips
