Yummy Orzo
Ever heard of orzo? It’s a silky, textured pasta that looks like over-sized rice. Choose a brand that has the bran and germ included – there are several on the market made from 100% whole wheat. You’ll get the benefit of B vitamins, iron AND fiber. Whole wheat orzo can have more fiber, protein and selenium than brown rice and it boils up quickly like traditional pasta.
Just remember that all grains need portion control, so use a half cup or cup size and take note of the calories/per serving. Add a boost of health by tossing with homemade tomato sauce and vegetables or add it to a vegetable soup. Mix it up with sautéed vegetables and then stuff the mixture into a cleaned out pepper for a delicious lunch or dinner.
