What can you do with leftover grilled chicken?

Use it in a lunch salad the next day. An easy recipe is to grab some light and dark lettuce (different colors represent different nutrients), cut up 2 Roma tomatoes, and 2 stalks of celery, add ¼ cup of drained corn kernels (use low sodium), and a handful of chopped walnuts.

Make a simple olive oil balsamic dressing, add 4 ounces of leftover chicken and you are good to go with a healthy meal bursting with flavors and a balance of protein, healthy carbohydrates and heart-healthy fat.
