A Great Winter Snack or Dessert

One of the best snacks I can think of – that’s pretty easy to make – is a baked apple. You can make 4 - 6 at a time, use apples that are a bit bruised or getting ripe.

Preheat your oven to 350 degrees. Cut around the top stem about halfway down to make a “removable lid.” Core the apples. Mix together:
1/3 cup dried cranberries
1/3 cup raisins
1/3 cup fresh cranberries
1/3 cup crushed pecans
½ cup “low sugar” maple syrup (save a bit to drizzle on cooked apples)

Mix ingredients together and spoon into hollowed cores. Replace lids. Place apples in a shallow non-stick baking pan and pour 2/3 cups of apple cider into the pan bottom (it should rise to about ¼ inch) Bake 30-40 minutes till apples are tender. Spoon juice over apples before serving and drizzle with remaining syrup. Serve with fat free ice cream or frozen yogurt.
